Spicy Black Bean Soup

Spicy Black Bean Soup
  • 1 lb dry black beans, soaked overnight

  • 4 tsp diced jalapeno peppers

  • 6 cups chicken broth

  • 1/2 tsp garlic powder

  • 1 Tbsp chili powder

  • 1 tsp ground cumin

  • 1 tsp cayenne pepper

  • 3/4 tsp ground black pepper

  • 1/2 tsp hot pepper sauce

  1. Drain black beans, and rinse.Combine beans, jalapenos, and chicken broth in a slow cooker. Season with garlic powder, chili powder, cumin, cayenne, pepper, and hot pepper sauce.Cook on High for 4 hours. Reduce heat to Low, and continue cooking for 2 hours, or until you are ready to eat.

I love beans! Mother taught me when I was a kid that beans were a good source of fiber and protein. I eat beans with my small portion meals every day.. my body does not like fat and beef, even chicken with the skin on! I have hemochromotosis so I don't eat very much of it… too much iron. I eat boneless skinless chicken breasts. Not fried! If one needs, use olive oil or canola oil (only 2 percent fats for each.

Winner! I am not a too hot food fan, so I sauteed my onion and a single jalapeno to sweeten it up before adding it to the pot. I also pureed about 1/3 of the mixture to add a little body to it. Man, it was great!

I have some black beans left over from dinner the other night. This will be a great way to use them up. I am assuming that the nutrition is for the entire pot, not per serving??
