Almost Curry Chicken

  • 1T Olive Oil

  • 1C Chopped Red Onion

  • 1 Pound Chicken Breast (cut into bite size pieces)

  • 2 Cloves of Garlic, minced

  • 1 1/2 C Homemade Chicken Broth (no salt)

  • 1/2t Poultry Seasoning

  • 1/4t Crushed Red Pepper

  • 1/8t Tumeric

  • 1 1/2C Bulgur Wheat

  • 1 15 oz Can of Black Eye Peas

  • 1T Fresh Snipped Thyme

  • Salt and Pepper to taste

  1. In a large skillet, saute chopped onion and garlic in olive oil over medium heat. When onion is translucent (about 4 minutes) add chicken. Allow chciken to sit and brown. Stir to brown all sides (cook about 4 minutes) Add seasonings and stir for 1 minute more.

  2. Carefully add chicken broth to pan and stir in bulgur. Cover and let simmer until liquid is absorbed. Add black eye peas and stir. Cover and allow flavors to blend for about 5-10 more minutes.

  3. Serve with fresh snips of thyme. I put this on top of some steamed broccoli and it was a great flavor.

  5. Replace Bulgur with 3/4 C long grain rice. (Your cooking time will increase a little)

  6. Soak and cook your own Blackeye Peas. This will reduce the salt in your meal

I am not a fan of the red pepper, so I leave it out. Maybe that is the thing. Curry (Tumeric) is an aquired taste, and it does take some time to grow on you. I cook with it a lot, and I like it, but it can be strong. Measure that one, don't eye ball it, just to be safe. LOL

I actually made this Sunday. My brother loved it and made me give him the recipes Myone niece and I think we need to aquire the taste. I think I may have to cut 1 of the ingredients in 1/2. But otherwise I'll try it again
