Creamy Curry Lemon Chicken

Ingredients
  • 1/2 cup fat-free sour cream

  • 1/4 cup light mayonnaise

  • 2 tablespoons lemon juice

  • 1 teaspoon curry powder

  • 1/2 teaspoon sugar

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • Cooking Spray

  • 4 Boneless skinless chicken breasts

  • (about 4 ounces each), rinsed and patted dry.

  • 2 slices whole wheat bread, frated in blender or hand grater (about 1 cup)

  1. Preheat oven 400 degreesF. In a

  2. small bowl, combine sour cream, mayonnaise, lemon juice, curry, sugar, salt and pepper; stir until well blended.

  3. Coat a 9-inch pie pan with cooking spray. Arrange chicken pieces in pan and spoon sour cream mixtue evenly over all. Sprinkle with breadcrumbs and bake 30 to 40 minutes or until chicken is no longer pink inside.
