Lemon Shrimp with Basil


  • 1 pound raw and medium shrimp, peeled and devained

  • 4 garlic cloves, minced

  • 1 teaspoon grated lemon rind

  • 1/4 teaspoon seafood seasoning mix

  • 1/4 teaspoon dried red pepper flakes

  • 2 tablespoon diet margarine

  • 2 tablespoon lemon juice

  • 2 tablespoon chopped fresh basil

  1. Place a 12-inch nonstick skillet over medium heat until hot. Coat skillet with cooking spray. Add shrimp, garlic, lemon rind, seafood and red pepper flakes. Cook 4 minutes or until shrimp are opaque in center, stirring frequently.

  2. Remobe from heat; add remaining ingredients. Serve in individual baking dishes or ramekins.
