Spinach, Mushroom and Mozzarella Supreme

Ingredients
  • @ (16oz.) bags frozen chopped spinach, thawed,drained and thoroughly pated dry.

  • 1 1/2 cups canned sliced mushrooms

  • 3 wedges The Laughing Cow cheese any light flavor, room temperature.

  • 1 cup diced onions

  • 1/3 cup shredded fat-free mozzarella cheese

  • 3/4 tsp garlic powder

  • salt and pepper to taste (optional)

Directions
  1. Preheat oven 350 degrees

  2. In a nonstick pan sprayed with cooking spray, cook onions over high heat until browned (about 3 minutes)

  3. In a mixing bowl combine spinach, onions,cheese wedges and garlic powder. Mix well.

  4. Spray a medium casserole dish with non-stick cooking spray. Spread 1/2 of spinach mixture on bottom.

  5. Layer 1/2 the mushrooms evenly over top. Spread the rest of spinach mixture on top the mushrooms. Layer the rest of the mushroomsover that.

  6. Sprinkle top of casserole with the shredded cheese.

  7. Cook 25-30 minutes. (until shredded cheese layer begins to crisp slightly.
