Not So Guilty Brownies
  • Servings 24

  • Brownies:

  • 3/4 cup all-purpose flour

  • 3/4 cup sugar

  • 1/4 cup unsweetened cocoa

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 cup oil

  • 2 tsp chocolate extract or flavor

  • 2 eggs

  • Frosting:

  • 3/4 cup powdered sugar

  • 1 T unsweetened cocoa

  • 1 T skim or 2% milk

  • 1/2 tsp chocolate extract or flavor

  • 1/8 tsp butter flavor

  1. Heat oven to 350 ° F. Grease bottom only of 8-inch square pan. Combine all brownie ingredients in a medium bowl and mix well. Spread in greased pan.

  2. Bake at 350 ° F. for 13-18 minutes, or until top is dry and springs back when touched lightly in center. Cool for 15 minutes.

  3. Meanwhile, combine all frosting ingredients in a small bowl & mix well. Spread over top of slightly cooled brownies. Cool completely.

Used coconut oil instead of butter and regular oil. It's better to use raw sugar than the sugar subs and I hate stevia, bitter after taste. Used unsweetened Almond Milk. Used vanilla extract and extra Tablespoon of cocoa powder. Delish. As for serving sizes in an 8 inch baking pan you can cut out 9 serving sizes or 12 serving sizes for a smaller serving of carbos.

Standard recipe, NOT for diabetics. No serving size. Epic FAIL.
I have never seen "chocolate extract or flavor". Just use a higher quality unsweetened 100% cocoa powder.

Unbelievably rich and delicious! Made it as a cake for my diabetic friend for his birthday. He and all the guests (kids included)loved it. I made one with walnuts and one without. My friend even polished off the rest of the brownies the next day for breakfast.
