Low-Carb Pizza Bites

They’re easy and fun to make – and have only 1 g carbohydrates apiece!

Low-Carb Pizza Bites
  • 8 ounces cream cheese

  • 2 eggs

  • 1 tsp. garlic powder

  • 1 tsp. oregano

  • 1/4 cup sugar-free pizza sauce or spaghetti sauce

  • 1/2 cup shredded mozzarella cheese or combination of mozzarella and other cheese such as Parmesan

  • 1/2 cup finely minced green pepper (or any other pizza toppings; adjust nutrition facts accordingly)

  • 24 slices pepperoni

  1. Put pepperoni in bottoms of mini muffin pan (I find oiling the pan doesn't work well).

  2. Cream the cream cheese with mixer until smooth and fluffy. Add eggs, garlic powder, and oregano, and beat until smooth.

  3. Mix rest of ingredients by hand. Fill muffin cups with cheese and egg mixture.

  4. Bake 15-18 minutes, or lightly browned on top and set in the center. Remove from oven and cool 5-10 minutes.

  5. Run a knife around top to loosen ( I use a plastic knife for my nonstick pan). Remove to a plate.

I would suggest making your own pizza sauce with a small can of tomato sauce so as not to waste a big can of anything. Then again, you could freeze extra sauce, I guess. With how little it takes for each one, there can't be more carbs.

OMGoodness…AMAZING!!!! I made these last night & they were a hit w/my 2 little girls!! I noticed the recipe didn't list how long to bake them or what temperature to bake them on..I baked them for 10-15 min at 400 degrees. Once they were browning on top I took them out & lightly sprinkled them w/mozzarella cheese. I will definitely be making these again!!!

I'm guessing that it's only 1 gram of carbs because the nutritional info is always 'per serving', which would be one 'bite', not the whole 24. It sounds DELISH and it's going to be on the menu for our neighborhood Christmas Party this year for sure!

I dont understand how this can only be 1 carb when you use pizza sauce and other ingredients that does have more then that in it.

These were a HIT last night for dinner. I love the pizza taste and the low carb ingredients.
I baked mine in a 375 degree oven for about 20 minutes. I also topped eac one with a slice of black olive. My step-daughter loved the eye-ball look. LOL
