2-1/2 cups red grape tomatoes, yellow pear-shape tomatoes, and/or cherry tomatoes
Nonstick cooking spray
1/4 cup finely chopped shallots (2 medium)
1 teaspoon snipped fresh lemon thyme or thyme
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
4 ounces fresh mozzarella cheese, cut into 1/2 inch cubes (1 cup)
Halve 1-1/2 cups of the tomatoes; set aside. Lightly coat a large nonstick skillet with cooking spray. Cook and stir shallots, lemon thyme, and garlic in hot skillet over medium
heat for 2 to 3 minutes or until shallots are tender.
Add all of the tomatoes, the salt, and pepper. Cook and stir for 1 to 2 minutes more or just until tomatoes are warmed. Remove from heat. Stir in mozzarella cheese.
