Go-with-anything Tomato Saute


  • 2-1/2 cups red grape tomatoes, yellow pear-shape tomatoes, and/or cherry tomatoes

  • Nonstick cooking spray

  • 1/4 cup finely chopped shallots (2 medium)

  • 1 teaspoon snipped fresh lemon thyme or thyme

  • 1 clove garlic, minced

  • 1/4 teaspoon salt

  • 1/4 teaspoon

  • 1/4 teaspoon black pepper

  • 4 ounces fresh mozzarella cheese, cut into 1/2 inch cubes (1 cup)

  1. Halve 1-1/2 cups of the tomatoes; set aside. Lightly coat a large nonstick skillet with cooking spray. Cook and stir shallots, lemon thyme, and garlic in hot skillet over medium

  2. heat for 2 to 3 minutes or until shallots are tender.

  3. Add all of the tomatoes, the salt, and pepper. Cook and stir for 1 to 2 minutes more or just until tomatoes are warmed. Remove from heat. Stir in mozzarella cheese.
