Super Egg Salad

  • 1 dozen eggs, hard boiled peeled and chopped

  • 4 green onions, diced

  • 1/3C mayo

  • 1/3C sour cream

  • 3TB grainy brown or Dijon mustard

  • 2TB prepared horseradish

  • 1/4 tsp ground red pepper or to taste

  • 4-6 slices bacon cooked and chopped into bacon bits

  • Salt and pepper

  1. Gently mix together all ingredients. This serves 4, which is 3 eggs per person. Serve with carrot sticks, celery, bell pepper slices, or other veg. You could also use this in a lower carb flat wrap for a sandwich.
