Southwest Rice Bowl

This fresh and hearty dish combines signature ingredients to give you a taste of the Southwest.

Ingredients
  • 1/2 cup cooked brown rice

  • 1/2 cup black beans

  • 1/3 cup shredded rotisserie chicken

  • 1/4 cup pico de gallo

  • 1/4 cup sliced avocado

  • 1 TBSP sliced green onion

  • 1 tsp fresh chopped cilantro

Directions
  1. Place black beans and chicken over rice.

  2. Top with avocado, pico, green onion and cilantro.

  3. Serve with a dollop of plain Greek yogurt if desired.
