Blueberry Quinoa Breakfast Bowl

Top quinoa with blueberries, pecans, and maple syrup for a breakfast of champions.

Blueberry Quinoa Breakfast Bowl
  • 1/4 cup dry quinoa

  • 1/2 cup cold water

  • 1/4 tsp cinnamon

  • 1/4 cup unsweetened almond milk

  • 1/4 cup blueberries

  • 1 TBSP pecan pieces

  • 2 tsp pure maple syrup

  1. Place quinoa and water in a microwave safe bowl and cover with a plate. Microwave for 4 minutes.

  2. Stir in cinnamon, cover and microwave for 2 more minutes. Leave cover for 2 minutes.

  3. Add almond milk and top with blueberries and pecans. Drizzle with maple syrup and enjoy.
