By abbeysue

Crispy bacon bits give these hearty and zesty deviled eggs a smoky crunch.

Bacon Avocado Deviled Eggs
  • 8 hard-boiled egg

  • 1 avocado (peeled and pitted)

  • 1 tbsp fresh lemon juice

  • 1/4 tsp McCormick Garlic Powder

  • 1/4 tsp salt

  • 2 tbsps fresh cilantro (chopped)

  • 1 dash hot sauce (optional)

  • 5 strips bacon (cooked)

  • 1/2 tsp McCormick Smoked Paprika

  1. With a sharp knife, slice eggs in half and scoop out the yolk, keeping the white halves intact and setting them aside.

  2. Place the yolk, avocado, lemon juice, garlic powder, salt, cilantro and hot sauce in a blender or food processor and process until smooth and creamy.

  3. Scoop the filling into a bag and pipe into the egg white halves.

  4. Wash and dry your blender or food processor. Process bacon strips with smoked paprika until you have bacon bits. Top each egg with the bacon. Serve immediately.

I cook something very similar to this all the time. I only use avocado to replace mayo in every single recipe. I haven't had mayo in my house for 10-11 years. I keep hard cooked eggs in the refrigerator all the time just for things like this.
