1-1/2 pounds ground turkey
1 16 0unce Reduced Sodium Diced Tomatoes flavored with peppers, garlic and onions.
1/4 cup flavored breadcrumbs
1/4 cup danish bleu cheese
1/4 cup parmesan cheese
2 tbspns finely chopped fresh parsley
2 medium size cloves garlic, mince
1/2 tsp salt
1/2 tsp pepper
Preheat oven to 350 degrees
In large mixing bowl, mix together ground turkey, 3/4 can of diced-tomatoes, bread crumbs, bleu cheese, parmesan cheese, parsley, garlic,salt and pepper. Mix well.
Place mixture in a non stick, or glass baking dish 10-1/2x8x1-1/2 inch baking dish. Shape into an oval form and pat firmly together. Spread remaining diced tomatoes on top. If you like sprinkle a little parmesan cheese and parsley on top also.
Cover with foil and bake at 350 degrees for 45 minutes, uncover and bake another 15 minutes to slightly browned.
Serve with fresh steamed broccoli, or cauliflower,and carrots; if desired.
