Ham, Mozzarella, and Apricot Flatbread

Low-carb flatbread is a simple and healthy alternative to pizza crust. This ham, mozzarella and apricot makeshift pizza pair perfectly with greens topped with a balsamic vinaigrette.

Ham, Mozzarella, and Apricot Flatbread
  • 1 high fiber flatbread (Light Original Flatout)

  • 1 apricot (diced)

  • 3 basil leaves (chopped)

  • 1 slice ham (diced)

  • 1 tsp olive oil

  • 1/4 cup mozzarella (shredded)

  1. Preheat over to 400 degrees.

  2. On a thin flat bread olive oil. Sprinkle apricots, basil and ham on flatbread. Top with cheese.

  3. On a piece of parchment paper or greased cookie sheet cook flatbread in oven for 5-7 minutes or until cheese is melted. Let flatbread cool on cooling rack.
