Deviled eggs are a great snack or party treat. This is a twist that has limitless possibilities. You can make it more like guacamole or keep it simple. Heat it up with some jalapenos or cool it with some chopped cilantro.Ingredients
10 hard boiled eggs, peeled and cut in half
3 slices cooked bacon
1 hass avocado
1t roasted garlic
1/2t smoked salt
1T lime juice
3T bacon grease melted (or mayo)
pepper to taste
Remove the yolks from the eggs and place in a blender or food processor
Pit and peel the avocado and add to the processor
Place 2 slices of the bacon in the processor (reserve one for garnish…or not)
Pulse a few times to mix the ingredients.
Add remaining ingredients (except for the last slice of bacon for garnish) and blend until smooth and creamy.
Place mixture in a piping bag or a plastic sandwich bag with the corner tip cut off and pipe filling into your empty egg halves.
Garnish with sliced bacon and a dash of smoked paprika if you like.
Optional garnishes: diced jalapeno, chopped cilantro, diced and seeded tomatoes, sliced green olives with pimento.
