Greek Yogurt Oatmeal Pancakes

Gluten-free and full of protein, these pancakes are guilt-free and easy enough for weekday mornings.

Greek Yogurt Oatmeal Pancakes
Ingredients
  • 1/2 cup rolled oats

  • 1/2 cup fat-free Greek yogurt

  • 4 egg whites

  • 1/2 tsp baking powder

  • 1/2 tsp vanilla

  • 1 teaspoon stevia

  • 1/2 tsp cinnamon

Directions
  1. Blend everything except the oats. Once you have a smooth liquid, add the oats and blend until just mixed (you want the batter to be a little lumpy).

  2. Let the batter rest for 5 minutes.

  3. Coat a skillet with nonstick spray, then place over medium-high heat. Add 1/4 cup batter to the pan at a time, flipping when the pancake starts to bubble.

  4. Serves 2. (4 pancakes per serving)
