Flatbread With Pomegranate Salsa and Goat Cheese

Flatbread With Pomegranate Salsa and Goat Cheese
Ingredients
  • 1/2 cup pomegranate arils

  • 1/2 cup craisins

  • 1/4 cup finely diced red onion

  • 1 TBSP olive oil

  • 1 TBSP balsamic vinegar

  • 1 TBSP honey

  • 2 TBSP chopped Italian parsley

  • 1 TBSP orange zest

  • Pinch of salt, optional

  • 2 pre baked naan flatbread

  • 8 oz goat cheese, crumbled

Directions
  1. Preheat oven to 450 degrees F.

  2. Mix all ingredients together well, excluding naan and cheese. Set aside.

  3. Place naan right on the oven rack and heat 5-10 minutes, flipping halfway through, until warm and crisped.

  4. Remove from the oven and cut each flatbread into 8 pieces, giving you 16 pieces.

  5. Top each piece with 1 TBSP goat cheese and a generous spoonful of salsa.
