Parmesan Roasted Cauliflower

Parmesan Roasted Cauliflower
Ingredients
  • 2 medium heads cauliflower, cut into 1 inch pieces

  • 1 large yellow onion, diced

  • 1/3 cup olive oil

  • 6 cloves garlic, minced

  • 2 tsp dried thyme

  • 1/2 tsp kosher salt

  • Pepper to taste

  • 1/3 cup freshly grated Parmesan cheese

Directions
  1. Preheat oven to 400 degrees F.

  2. Line a baking sheet with foil.

  3. Toss all ingredients together, excluding the Parmesan.

  4. Spread onto the baking sheet.

  5. Bake 30 minutes, flipping cauliflower every 10 minutes.

  6. The last 5 minutes, sprinkle with Parmesan.
