Cranberry Tart

Cranberry Tart
Ingredients
  • Crust:

  • 1 cup almond meal

  • 1/3 cup coconut oil

  • 1/4 tsp salt

  • 1 tsp vinegar

  • 1 TBSP water

  • Filling:

  • 2 1/2 cups whole cranberries

  • 1/3 cup water

  • 2 TBSP orange juice

  • 2 TBSP orange zest

  • 1/2 cup Truvia baking blend (sugar/stevia blend)

  • 2 TBSP flour

  • 1 TBSP butter, cut up

Directions
  1. Preheat oven to 375 degrees F.

  2. In a medium bowl, combine almond meal and salt. Add coconut oil and mix.

  3. Add vinegar and water and mix well.

  4. Press evenly into a tart pan.

  5. In a large saucepan, combine cranberries, water, juice and zest. Heat over medium heat for 2-3 minutes.

  6. In a small bowl, mix sugar and flour. Add to saucepan. Cook 1-2 minutes longer or until sugar dissolves.

  7. Remove from heat and stir in butter until melted.

  8. Pour into unbaked crust.

  9. Bake 35-40 minutes or until crust is golden and filling is set.

  10. Let cool completely on a wire rack.

  11. Serve with whipped cream if desired.

Although I haven't tried it yet, this sounds similar to the cranberry sauce I make at Thanksgiving. So it must be tasty! :-)
