Twisted Biscuits & Gravy

This recipe is called a lasagna in my ketogenic cookbook, but it really is more like biscuits and gravy sans the biscuit. So creamy and yummy for breakfast, lunch or dinner.

Twisted Biscuits & Gravy
Ingredients
  • Egg Mixture:

  • 18 large eggs, beaten

  • 1 tablespoon coconut oil

  • Salt and pepper to taste

  • Gravy Mixture:

  • 1 pound ground pork sausage (no casings)

  • 1 pound cream cheese

  • 1 1/2 cups low-sodium beef broth

  • Fresh cracked pepper to taste

  • Other Layers:

  • 1 pound very thinly sliced low-sodium ham

  • 1 cup shredded Mozzarella cheese

  • 1 cup grated Parmesan cheese

Directions
  1. Preheat your oven to 325 degrees F.

  2. Prepare a13x9 cake pan with non stick spray and set aside

  3. In a very large skillet, melt coconut oil. Pour in your egg mixture and cook over medium low heat to a soft scramble. Stirring constantly will keep them creamy. Remove from heat and set aside

  4. To make the gravy, in a large skillet brown the sausage over medium heat, breaking it into small pieces and cooking until it is no longer pink.

  5. Add the cream cheese to the pork about 2 oz. at a time with about 1/4 cup of broth and stir until melted. Repeat until all the cream cheese and broth are incorporated. Stir constantly until cheese is all melted. Simmer for about 2 minutes more, stirring constantly to allow gravy to thicken. Season and set aside

  6. In your baking dish, begin to layer your ingredients.

  7. Layer 1: 1/3 of gravy mixture

  8. Layer 2: 1/2 of the shaved ham

  9. Layer 3: 1/2 of the soft scrambled eggs

  10. Layer 4: 1/3 of the gravy mixture

  11. Layer 5: 1/2 of the mozzarella cheese

  12. Layer 6: 1/2 of the Parmesan cheese

  13. Layer 7: Remaining gravy mixture

  14. Layer 8: Remaining soft scramble eggs

  15. Layer 9: Remaining ham

  16. Layer 10: Evenly sprinkle the reaming Mozzarella and Parmesan cheeses on top

  17. Bake for 25 minutes until cheese is melted

  18. Broil on HI for 2-3 minutes more to crisp up the top layer if you like

  19. Remove from oven and allow to rest for 5-10 minutes before serving
