Apple Cinnamon Cottage Cheese Pancakes

These pancakes are high in protein and sure to keep you full until lunch!

Apple Cinnamon Cottage Cheese Pancakes
  • 1 cup oat flour

  • 2 cups cottage cheese, 1% milkfat

  • 2 cups egg whites or liquid egg substitute

  • 2 scoops vanilla protein powder

  • 2 small apples, cored and diced

  • 1/2 tsp apple pie spice

  • 4 teaspoons Splenda

  1. Combine all ingredients except apples and pancake syrup in blender; process at medium speed until smooth. Add apples and pulse until the apples are about the consistency of minced apples. Cook on lightly greased skillet or griddle at medium high heat until brown on each side. Serve hot with your favorite low-carb toppings.
