Cranberry-Pecan Butter

I love cranberries, but the relishes and sauces are just way too high carb for me. I found this great recipe from my grocery store for making a slightly sweet cranberry butter that will be great on your turkey or ham as well as the sweet potatoes.

Cranberry-Pecan Butter
Ingredients
  • 3/4 cup salted butter, softened

  • 1 cup fresh cranberries (unsweetened)

  • 1/3 cup chopped pecans (walnuts are nice too)

  • 3 teaspoons Truvia (3 packets)

  • 1 tablespoon honey

Directions
  1. Cut the butter into chunks and allow to soften in a medium bowl

  2. In a food processor, pulse the cranberries until they are chopped

  3. Add the nuts to the cranberries and process until blended. (should be chunky)

  4. With a mixer, whip the butter until it is creamy. Add the Truvia and honey and whip until blended.

  5. Add the cranberry and nut mixture to the butter and beat until incorporated. The butter will turn pink.

  6. Shape butter into a 2x6 log and roll it up in plastic wrap and allow to set for at least 20 minutes. Or put into a serving dish and cover with plastic wrap.

Made this yesterday & we all taste tested it. By itself it's just ok, but with turkey,(cold leftovers),it's great. Thanks for the recipe
