Leftover Veggie Fritters

Revive your leftover vegetable sides and make them into fritters!

Leftover Veggie Fritters
  • 2 cups kale cooked

  • 2 cups spinach cooked

  • 1/2 onion cooked

  • 2 cups cauliflower cooked and mashed

  • 1 cup broccoli cooked and mashed

  • 1 egg beaten

  • 1 egg white beaten

  • 1/4 cup whole wheat flour

  • 1/3 cup paemesan cheese grated

  • 1/2 jalapeno chopped and cooked

  • salt and freshly ground pepper to taste

  1. Mix all ingredients well, spoon 6 mounds into heated oil in a large skillet.

  2. Cook until brown , flip. Brown on other side. Let cool and enjoy!
