Egg Muffins

Egg Muffins
  • 1 Dozen Large Eggs

  • 1 Red Bell Peppers, diced

  • 1 Green Bell Peppers, diced

  • 1 tsp Garlic Salt

  • 1 TBSP Buffalo Sauce

  • 1 lb Cooked Sausage

  • 2 cups Shredded Colby Jack Cheese

  1. Preheat oven to 375 degrees.

  2. Whisk all eggs together.

  3. Add bell peppers, garlic salt, buffalo sauce, cooked sausage, and cheese. Stir well to make sure you have a little bit of everything in each muffin.

  4. Use a large ice cream scoop to evenly distribute the mixture into 16 pre-greased liners.

  5. Cook for 12-15 minutes or until the tops just start to brown.

  6. Enjoy!

  7. Note: You can freeze these in big batches and reheat them in the microwave in about 1-1.5 minutes.

I made these this morning, yum!! But the only thing is after they shrunk or shriveled up. I did use egg beaters and egg whites in stead of regular eggs. These were still very good!

This sounds perfect!! We like scrambled eggs with lots of veggies and a little meat so these are perfect!
