Slow Cooker Chicken Fajitas

Let the slow cooker take all the prep work out of fajitas by cooking the ingredients together.

Slow Cooker Chicken Fajitas
  • 4 boneless skinless chicken breasts

  • 1 large yellow onion, halved and sliced

  • 1 large each green pepper, red pepper, yellow pepper, sliced

  • 1 10 oz. can Rotel diced tomatoes and chilies

  • 2 1/2 tsps chili powder

  • 2 tsp cumin

  • 1 heaping tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp coriander

  • 1/4 tsp pepper

  1. Mix all the seasonings together. Rub over the chicken breasts.

  2. Place half the peppers and onions in the slow cooker. Place the chicken breasts on top, pour the can of tomatoes over, topped with the rest of the onions and peppers.

  3. Cook on low for 6-7 hours.

  4. Before serving, slice or shred the chicken breasts. Stir to mix well.
