Fish Tacos With Salsa Verde in Lettuce Wraps

Cut the carbs by wrapping these spicy fish tacos in a large leaf of romaine.

Fish Tacos With Salsa Verde in Lettuce Wraps

  • 3 fillets cod

  • 1 tbsp Cajun seasoning

  • 3 tbsps olive oil

  • salt

  • salsa

  • pepper

  • 1 can tomatillos

  • 1 med. onion (chopped)

  • 3 tsp minced garlic

  • 1 bunch cilantro

  • 1 cup chicken broth

  • 1/2 cup cabbage (chopped)

  • guacamole (optional)

  • romaine lettuce leaves (large, or other lettuce, washed)

  1. Heat a skillet on medium-high heat.

  2. Cube fish into 1" cubes, put in bowl and coat the fish with olive oil. Then add the Cajun spice, salt, and pepper mix until evenly coated.

  3. Add your fish to the hot pan and cook till your fish is flaky. This will only take a few minutes. Remove from pan.

  4. Chop your onion in medium chunks. Add onion and minced garlic to pan and saute until tender.

  5. Add your canned tomatillo, chicken broth, and chopped cilantro. Simmer until liquid is reduced by half. Take off heat and cool.

  6. Chop your cabbage in thin strips.

  7. Take a large lettuce leaf and scoop some fish into it and top with cabbage, salsa mixture, and guacamole.
