Chicken Vegetable Dish

  • 2 boneless skinless chicken breasts , halved

  • 1 pinch salt and pepper

  • 1 tbsp olive oil

  • 1 1/4 cup low fat unsalted chicken broth

  • 2 cup fresh broccoli florets

  • 1 Squash, summer, all types, fresh, medium , yellow, sliced

  1. Sprinkle chicken with salt and pepper. Heat oil in a large skillet and brown chicken on both sides. Add chicken broth; cover and cook 15 to 20 minutes or until chicken is cooked through.

  2. Add vegetables and sprinkle lightly with salt and pepper. Cover and cook 5 to 6 minutes or until vegetables are just crisp-tender.
