Easy Skillet Fish Dish

  • 1 lb orange roughy fillet

  • 1 tbsp sesame oil

  • 1 small red bell peppers

  • 1 small green bell peppers

  • 1/2 cup fresh chopped onion , coarsely

  • 1/2 tsp dried basil

  • 1 pinch salt and pepper (to taste

  1. Cut fish into 4 serving pieces.

  2. Heat oil in a large nonstick skillet. Add peppers and onion. Arrange fish on top.

  3. Sprinkle with seasonings.

  4. Cover; cook over low heat 8 to 10 minutes. Uncover; continue cooking until fish tests done and vegetables are crisp tender.
