Grilled Caribbean Chicken Breast

  • 1/4 cup fresh squeezed orange juice

  • 1 tsp orange peel

  • 1 Tbsp olive oil

  • 1 Tbsp lime juice

  • 1 tsp ginger, minced

  • 2 ea garlic clove, minced

  • 1/4 tsp hot pepper sauce

  • 1/2 tsp minced fresh oregano

  • 1 1/2 lb boneless, skinless chicken breasts, halved

  1. In a blender, combine all ingredients except the chicken. Pour the marinade over the chicken breasts and marinate in the refrigerator at least 2 hours or up to 48 hours. Grill or broil the chicken for about 6 minutes per side until no trace of pink remains.
