Chicken Marsala


  • 2 tsp olive oil

  • 1 medium onions , chopped

  • 1 1/2 lb boneless skinless chicken breasts , pounded to ¼-inch thickness

  • 1 cup cooking wine (marsala wine)

  • 3/4 cup fat free reduced sodium chicken broth

  • 1 tbsp cornstarch (or arrowroot powder)

  • 1 pinch black pepper , fresh ground (to taste)

  • 1 pinch salt (optional)

  1. Heat the oil over medium-high heat in a large frying pan. Add the onion and stir fry for 5 minutes. Add in chicken and cook thoroughly, about 5 minutes per side.

  2. Pour the wine over the chicken and cook for 4 minutes (wine should look syrupy).

  3. Dissolve the cornstarch into the broth. Pour over the chicken and cook for 2 minutes (or until the sauce is thickened). Season with salt and pepper if you like.
