Garden Bounty Tomato Soup


  • Makes 8 to 10 side dish servings(9cups)

  • 2 pounds roma tomatoes,chopped

  • 2 14-ounce cans beef broth

  • 2 cups finely chopped vegetables (carrot, celery, sweet pepper, fennel, and/or onion)

  • 1 6 ounce can tomato paste

  • 1 to 2 tspns sugar or heat-stable granular sugar substitute.

  1. In a 31/2 or 4-quart slow cooker combine tomatoes, beef broth, vegetables, tomato paste and sugar.

  2. Cover and cook on low-heat setting for 6 to 8 hours, or on high-heat setting 3-4 hours.

This is a good recipe, but I pureed it and then added 1T of fat-free half and half to each serving and it tasted like Cambells, cream of tomato soup. Yummy!

thanks for shareing. this will be great next year when we can plant our own gardens or go to farmers markets.
