Baked Eggs in Avocado

Baked Eggs in Avocado
Ingredients
  • 2 ripe avocados

  • 4 fresh eggs

  • 1/8 teaspoon pepper

  • 1 tablespoon chopped chives (optional)

Directions
  1. Preheat the oven to 425 degrees F.

  2. Slice the avocados in half, and take out the pit. Scoop out about two tablespoons of flesh from the center of the avocado, just enough so the egg will fit snugly in the center.

  3. Place the avocados in a small baking dish. Do your best to make sure they fit tightly.

  4. Crack an egg into each avocado half. Try your best to crack the yolk in first, then let the egg whites spill in to fill up the rest of the shell.

  5. Place in the oven and bake for 15 to 20 minutes. Cooking time will depend on the size of your eggs and avocados. Just make sure the egg whites have enough time to set.

  6. Remove from oven, then season with pepper, chives, or garnish of your choice.

  7. Enjoy!

I give this Breakfast 5 stars… Ok so her are my Avocado and eggs bake… these are really good… I like my eggs runny or hard cooked.. ether way it is good. Season to taste

I have been eating Avacado w/eggs for a while now but I cook them differently, I skin them, squirt lime juice on them, salt/pepper and garlic powder, put them into a pan, w a little olive oil (tblesp) let them cook a little soft then add the egg in the middle add pepper and garlic powder again cover to steam the egg, these have soooo much more flavor.

Ok, I should have tired it before I gave it my stars. I take them back. It sounded perfect, but the baked avocado leaves a bitter after taste, at least to me. Maybe it was the type of avocado I used. But I think I will stick to my boiled eggs with guacamole. Sorry

Thanks Aleahk! I love avocado and have been eating eggs with guacamole. This will be a nice change...picked up my avocados today at the store. Looks like breakfast tomorrow.

Sounds good but easier to cook the egg over easy and have the avacado on the side. Never had baked avacado.
