Carrot-Cauliflower Salad
Ingredients
  • 2 medium carrots, peeled and thinly sliced

  • 1 cup cauliflower flowerets, large florets divided into smaller pieces

  • 2 tablespoons bell pepper, diced

  • 2 tablespoons celery, diced

  • 2 tablespoons onion, diced

  • 1/4-1/2 cup tomato salad dressing, recipe can be found here: http://www.diabeticconnect.com/diabetic-recip...

Directions
  1. Prepare vegetables.

  2. Place carrots in saucepan with 1 teaspoon salt and bring to boil, cook for one minute.

  3. Add remaining vegetables, bring water back to a boil, cook for one additional minute.

  4. Add remaining vegetables, bring water back to a boil, cook for one additional minute.

  5. Cover and place in frige to chill and marinate.

This recipe sounds good but it doesn't say how much water to put in the sauce pan to cook the vegetables and it doesn't say to drain the veggies and then add the dressing. I am assuming that the cover and marinate part is after they are drained and the dressing is put on.
