Blueberry Coconut Flour Muffins
Ingredients
  • 6 Large Egg, beaten

  • 1/4 cup Irish Butter (or any good quality one)

  • 1/4 cup Milk

  • 1/2 cup Sugars, Granulated

  • 1/2 cup 100% Certified Organic Coconut Flour

  • 2 tsp Organic Coconut Flour

  • 2 tsp Lemon Peel, Raw

  • 1/2 tsp sea salt

  • 1/2 tsp Baking Powder

  • 1/2 tsp Xanthum gum

  • 1 cup blueberries (fresh or frozen)

Directions
  1. Preheat oven to 375 degrees F. Line muffin tin with paper liners.

  2. Whisk eggs, melted butter, milk, and granulated sugar in a medium bowl.

  3. Thoroughly combine 1/2 cup coconut flour, lemon peel, salt, baking powder, and 1/2 tsp xanthum gum. Sift flour mixture into egg mixture. Whisk until smooth.

  4. In a small bowl, combine blueberries and remaining 2 tsp of coconut flour. Stir gently into batter.

  5. Fill prepared muffin cups until almost full. Bake for 12 - 15 minutes or until toothpick inserted into centers come out clean. Cool 5 minutes on pan or wire rack. Remove from pan, serve warm.

sounds good but sugar?? on a diabetic site. I will use a sugar sub and low carb milk that should cut down the carbs 10 (net) is a little high for 1 muffin

Although it does change the totals, I have made this using orange peel grated in lieu of the lemon peel, with chocolate chips (less than 1 cup) for the blueberries.
