Raspberry Pretzel Salad

A quick, easy and low-fat dessert that the whole family will love!

Raspberry Pretzel Salad
  • 2 cups crushed pretzels

  • 3/4 cup melted margarine

  • 1 1/2 Tablespoon splenda

  • 1 (8 oz) light cream cheese

  • 1 (8 oz) light cool whip

  • 3/4 cup splenda

  • 1 large box raspberry JELLO (sugar-free)

  • 2 packages frozen raspberries

  1. Preheat oven to 350 degrees. Mix together crushed pretzels, melted margarine and 1 1/2 T. of splenda. Press into a 9x13 baking pan. Bake at 350 degrees for 10 minutes. Let cool completely.

  2. Mix cream cheese, cool whip and 3/4 cup splenda. Once pretzels are cool, spread mixture over pretzels.

  3. Dissolve JELLO in 2 cups boiling water. Add frozen raspberries (do not drain). Mix well, let stand for about 10-15 minutes until it begins to set. Then pour over the cream cheese mixture. Let chill and cut into 16 pieces when ready to serve.

Ok, I give this 5 stars, but only because I changed it up quite a bit. It is an Awesome recipe. Made it for Easter dessert. Why they call it a salad is beyond me...it's a dessert.

I changed the pretzels for 1/2 cup each of chopped nuts (pecans and walnuts) unsweetened coconut and coconut flour
I changed the butter for coconut oil 1/2 cup
I don't use Splenda so I used a 50-50 mix of sugar and stevia (you could use 100% stevia in this for sure)
I didn't have raspberry jello, but I had strawberry and dark cherry, so I used those two flavors to get "one large box", which they do not make in sugar free jello. (well at least in my neck of the woods)
I used 12 oz of frozen raspberries (I don't know what 2 packages is and 12oz worked perfect)
I also use full fat cream cheese.
My nutritional values changed a little:
18 servings (each about a 2x3 square)
Calories 183
Carbohydrates 12g
Fat: 16g
Protein: 3g

I will definitely be keeping this one in my recipe book.

This sounds yummy, but I am going to do it with a chopped nut base instead of pretzels. I will let you know how it goes.
