Potato Salad

Potato Salad
  • 10 large potatoes

  • 3 boiled eggs

  • 1/16 cup diced pickles

  • 1/16 cup diced olives

  • 1/8 cup mayonnaise

  • 1 teaspoon mustard

  • dash celery salt

  1. Boil potatoes until done, peel and cut into half inch to inch pieces. Boil eggs, peel and dice. Cut pickles and olives into small pieces, about 1/4 inch squares or smaller. Add ingredients together, stir until well mixed. Add or subtract mayonnaise, mustard or condiments to taste. Add mayonnaise by tablespoon-fuls until you reach the desired mixture. Keep refrigerated until used.

I just ran this through a recipe analyzer. It's got 36g net carbs and 5.7g protein per serving. There's nothing there to make it diabetic friendly. My own guilty pleasure - potatoes, scallions and bell pepper - has similar nutritional values and I'd never kid myself that it's something to prepare on a regular basis.

why is this on this site? There is no nutritional facts and with the amount of potatoes I'm sure it's not diabetic friendly. Anyone can make that kind of potato salad
