I love egg salad and this recipe combines it with other crunchy veggies that really work so nicely together. This is another adapted one from Fit2Me. (you know me, I cannot leave a recipe to it's original form…even when I try)Ingredients
3 tablespoons plain greek yogurt
3 tablespoons mayonnaise
1/4 teaspoon freshly ground pepper
1/8 teaspoon salt
8 hard-boiled eggs
1/2 cup shredded carrot
1/2 cup chopped fennel bulb and leaves
1/4 cup sliced scallions
In a medium bowl, combine yogurt, mayonnaise, pepper and salt. Whisk until blended
Add to your yogurt dressing the diced up hard-boiled eggs and mash to desired consistency. Fold in carrots, fennel and scallions and serve on a bed of greens.
Options: stuff celery with your egg salad or serve as an appetizer on sliced cumbers or crackers.
