Veggie Egg Salad

I love egg salad and this recipe combines it with other crunchy veggies that really work so nicely together. This is another adapted one from Fit2Me. (you know me, I cannot leave a recipe to it's original form…even when I try)

Veggie Egg Salad
  • 3 tablespoons plain greek yogurt

  • 3 tablespoons mayonnaise

  • 1/4 teaspoon freshly ground pepper

  • 1/8 teaspoon salt

  • 8 hard-boiled eggs

  • 1/2 cup shredded carrot

  • 1/2 cup chopped fennel bulb and leaves

  • 1/4 cup sliced scallions

  1. In a medium bowl, combine yogurt, mayonnaise, pepper and salt. Whisk until blended

  2. Add to your yogurt dressing the diced up hard-boiled eggs and mash to desired consistency. Fold in carrots, fennel and scallions and serve on a bed of greens.

  3. Options: stuff celery with your egg salad or serve as an appetizer on sliced cumbers or crackers.

The fennel takes this to a whole new level. If you don't like fennel, try peeled and seeded cucumbers or celery.
