Ham and Cheesy Chowder

This is a wonderful cold weather chowder. Creamy and decadent. Serve it up in a mug and hang out by the fire…perfect

Ham and Cheesy Chowder

  • 1 cup cubed potatoes (peel or no peel, up to you)

  • 3 cups cauliflower roughly chopped

  • 2T flour (optional)

  • 2T butter

  • 1/4 cup chopped onion

  • 2 cups whole milk

  • 1/4 cup plain greek yogurt

  • 8 oz. Velveeta cheese cubed

  • 1 pound diced ham

  • Fresh ground pepper to taste

  1. In a medium sauce pan, boil the potatoes and cauliflower until tender. About 15 min. Drain and return to pan to mash slightly and set aside.

  2. In a large soup pot melt butter on medium heat. Add onions and cook until translucent. About 3-5 minutes. If you are using the flour, add to onion and butter and stir to make a rue. Cook for about 2 min.

  3. Using a whisk, add milk and yogurt. Stir constantly over medium heat until thickened. Add Velveeta cheese and stir until melted.

  4. Add potato and cauliflower mixture and diced ham and and cook until ham is heated through.

  5. Serve hot with fresh ground pepper on top.

  6. You can reduce the carbs even more by removing the potato and flour. It won't be quite as thick, but it will still taste great. Want to cut some calories, use low fat milk and yogurt.

I love ham and I love cheese and cauliflower, I want to create this dish as a comfort food, it looks delicious and sounds tasty. Thanks for the recipe.

My family waits all year for cold weather to have this soup. We had it tonight and I made a double batch so we would have it for the next few days of cold.
