Quick Broccoli Soup

Ingredients
  • 4 cups low sodium nonfat chicken or vegetable broth

  • 2 1/2 lbs broccoli florets

  • 1 onion quartered

  • 1 cup lowfat milk

  • 1/4 teaspoon salt (optional)

  • 1/4 cup blue cheese, crumbled

Directions
  1. mix broth, broccoli, and onion-bring to a boil. reduce heat cover and simmer until tender (about 20 min)

  2. puree soup in a blender-return to saucepan add milk or water as desired

  3. serve and sprinkle with cheese

  4. Makes 6 one cup servings
