Pan-Roasted Garlicky Cauliflower and Broccoli

Ingredients

nonstick cooking spray

2 large cloves of garlic thinly sliced

1/4 tsp salt

2 tbsp olive oil

4 cups of cauliflower florets

4 cups broccoli florets
Preheat oven 400 degrees. Grease a 3 1/2 quart casserol with cooking spray.
Crush the garlic with the salt until it is a paste and place in a large bowl. Add the oil and mix well. Add the cauliflower, broccoli and toss well to coat. Arrange the mixture in a single layer in the prepared baking dish and bake until tender and lightly browned, about 30 minutes, stirring every 5 minutes.
