Pan-Roasted Garlicky Cauliflower and Broccoli

Ingredients
  • nonstick cooking spray

  • 2 large cloves of garlic thinly sliced

  • 1/4 tsp salt

  • 2 tbsp olive oil

  • 4 cups of cauliflower florets

  • 4 cups broccoli florets

Directions
  1. Preheat oven 400 degrees. Grease a 3 1/2 quart casserol with cooking spray.

  2. Crush the garlic with the salt until it is a paste and place in a large bowl. Add the oil and mix well. Add the cauliflower, broccoli and toss well to coat. Arrange the mixture in a single layer in the prepared baking dish and bake until tender and lightly browned, about 30 minutes, stirring every 5 minutes.
