Simple Almond Flour Muffins

These muffins skip the white flour but none of the fluffy great taste!

Simple Almond Flour Muffins

Ingredients
  • 1 Cup Almond Flour

  • ½ teaspoon Baking Soda

  • 3 Eggs

  • ¼ Cup Almond Milk

  • 2 Tablespoons Honey

  • 1 teaspoon Lemon Juice

Directions
  1. Preheat oven to 350 degrees and line cupcake pan with paper liners. Lightly spray liners with non-stick cooking spray.

  2. Combine all ingredients.

  3. Fill each liner almost halfway full.

  4. Bake for 14-17 minutes. To check to see if they are done, slightly jiggle the pan.

Daizyscream — the sugar content is 3.5 grams per muffin of the 6 grams carb from the honey alone. It is an added sugar that the recipe doesn't identify as such.

Everything was fine until I got to the honey which is NOTHING but sugar!! Over half the carbs in this recipe are from the 2 T of honey — WAY too expensive for me. I keep my blood sugars in excellent control and I'm not about to sacrifice that over some muffins with honey.

These recipes always have some honey or something that is "sugar" in them. What is the sugar content. I don't get it. This IS a diabetic site, right? I am concerned with the calories and carb content, but also the sugar.

I forgot to add the milk, and added fresh blueberries - delicious, will definitely make again (without milk)

I just made these, but did a little tweaking. I used 1/2 cup stevia sweetener for baking. Added some cinnamon and carob powder. Also a little almond flavoring. Turned out pretty darn good I think.

Low Carb Liz, I always use the low carb milk (Hoods) in place of almond milk in recipes with almond flour and it works just fine. I don't care for almond milk either and just for enjoying a good cold glass of milk, the Hoods has a nice thick feel just like whole milk rather than a watery flavored taste like almond or skim milk.

i wonder if you could use just low carb milk. Mybe add a little almond extract? I don't really like the taste of almond milk so it's not worth the price to me.
