Ingredients
  • LOW CARB BAKING MIX:

  • 1/4 Cup wheat bran

  • 5 Ounces no sugar added whey protein isolate (2/3 cup)

  • 5 Ounces wheat gluten (2/3 cup)

  • 1 1/8 Cups soy flour (1 cup + 2Tbsp)

  • 1/4 Cup golden flaxseed meal

  • COBBLER:

  • 3/4 Cup All Purpose Low-Carb Baking Mix

  • 1/4 Cup pecan halves

  • 8 Tablespoons granular sugar substitute (sucralose), divided

  • 3/4 Teaspoon ground cinnamon, divided

  • 1/4 Teaspoon salt

  • 3 Tablespoons unsalted butter, cold and cut into small pieces

  • 1/3 Cup heavy cream

  • 2 Tablespoons sour cream

  • 1 large eggs

  • 3 Cups fresh cherries, pitted(about 2 pounds)

  • 1/4 Teaspoon almond extract

Directions
  1. LOW CARB BAKING MIX:

  2. Combine all ingredients and mix thoroughly. Use immediately or store in an airtight container in the refrigerator for up to 1 month.

  3. COBBLER/BISCUITS:

  4. In a food processor, pulse baking mix, pecans, 2 tablespoons sugar substitute, 1/2 teaspoon cinnamon and salt until medium ground. Add butter and pulse until mixture resembles a coarse meal.

  5. In a liquid measuring cup or bowl, whisk heavy cream, sour cream and an egg. Pour into food processor and pulse just until combined. Remove dough and pat into a flat disk. Cover with plastic wrap and chill 1 to 2 hours.

  6. Preheat oven to 400°F.

  7. FILLING:

  8. In a medium bowl, toss cherries with 1/3 cup sugar substitute, almond extract and 1/4 teaspoon cinnamon. Pour filling into an 8-inch square or round baking dish. Divide dough into 8 pieces and pat into disks about 3 across.

  9. Stagger biscuits over filling and bake 35 to 40 minutes, until biscuits are browned and cooked through and fruits are bubbly and tender. Serve with whipped cream (optional).
