Cauliflower Mash

  • 1 1/2 pounds of cauliflower,cut into large florets. ( about 8 cups

  • 3 garlic cloves

  • 2 (14 ounce ) cans of lower sodium chicken broth

  • Salt and freshly ground pepper

  • 2 tbsp chopped fresh chives

  1. Combine cauliflower ,garlic and broth in a large saucepan. If cauliflower is not completely covered by the broth ,add wateruntil covered,bring to a boil.reduce heat to medium low and simmer until cauliflower is tender,about 12 minutes.

  2. Reserve 2 tbsp of the cooking liquid and drain cauliflower.

  3. Transfer cauliflower and garlic to the bowlof a food processor ,and process until smooth ,pulsing in 1 or 2 tbsp of the reserved broth.If necessary ,to moisten the mixture. Season with salt and pepper to taste . Just before serving ,stir in chives.

i fixed this recipe yesterday and wow… it is delicious without the guilt of eating mashed potatoes!! thank you for another way to eat low carb and enjoy it!

wow… and i LOVE mashed potatoes but they dont love me. now if someone could come up with a low carb white dinner roll!! LOL

I prepare this often because I love cauliflower, and I use vegetable broth instead of chicken broth.

I've served this before .. and no one noticed that they weren't eating potatoes! This is delicious!

I make this but your recipe is a little easier. I will try this. We use this in place of mashed potatoes. Thank you.
