Easy Stuffing Cakes

Turn leftover stuffing into delicious stuffing cakes. They're easy to make the day after a big holiday feast. Mix in leftover mashed potatoes or sweet potatoes if you like, using 1 egg for every 2 cups leftovers.

Easy Stuffing Cakes
  • 2 cups leftover stuffing

  • 1 large egg, beaten

  • 1 tablespoon butter

  1. In a large bowl, stir stuffing and egg together until blended. Heat butter in a large skillet over medium heat.

  2. Shape 1/2 cup stuffing mixture into a ball, then flatten into a 3-inch patty. Repeat with remaining mixture.

  3. Place patties in skillet and cook about 3 minutes per side or until golden brown and heated through.
