Salmon with Orange Sauce from Novo Nordisk Diabetes Academy

Salmon with Orange Sauce
  • 1 pound salmon

  • 8 fluid ounces orange juice

  • 3 tablespoons sucralose-based sweetener sugar substitute, such as Splenda®

  • 1 tablespoon cornstarch

  • 1/2 cup fat-free half and half cream

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • 1 tablespoon olive oil

  1. Preheat oven to 450°F.

  2. Pour orange juice into small saucepan. Add sweetener and bring to a rolling boil over medium high heat, reducing to almost half.

  3. Mix the half and half, cornstarch, pepper, and salt. Set aside.

  4. Whisk the olive oil into the orange juice. Add half and half mixture. Stir well and return to heat until boiling.

  5. Remove sauce from heat and set aside.

  6. Prepare salmon by searing in a sauté pan. Bake in preheated oven 10-15 minutes until cooked through but still tender.

  7. Place salmon on serving plates. Pour sauce over salmon and serve immediately.
