Chicken Kebabs
  • 16 ounces boneless skinless cooked chicken breast (yield after skin removed)

  • 2 teaspoons whole

  • cumin seeds

  • 4 tablespoons onion powder

  • 3 tablespoons ground dried oregano

  • 2 tablespoons ground dried thyme leaf

  • 2 tablespoons lemon juice

  • 2 tablespoons extra virgin olive oil

  • 6 ounces plain nonfat yogurt

  • 1/4 cup fresh sprigs dill weed

  • 3 cups shredded or chopped mixed salad greens

  • 1 cup pared chopped peeled cucumber

  • 1 teaspoon lemon juice

  1. 1.In a small bowl, mix together the first 8 ingredients and let marinate for at least 30 minutes.

  2. 2.In small bowl, mix together yogurt, 2 tablespoons lemon juice, 1/4 cup olive oil, fresh dill, cucumber, and salt until well combined. Hold in refrigerator.

  3. 3.Skewer the marinated pieces of chicken on 8 soaked bamboo skewers and grill until cooked through.

  4. 4.To plate, lightly toss mixed greens with lemon juice. Place in the corner of a square plate with skewers standing up against greens, and sauce in a ramekin for dipping.
