Chicken Kebabs from Novo Nordisk Diabetes AcademyIngredients
16 ounces boneless skinless cooked chicken breast (yield after skin removed)
2 teaspoons whole
4 tablespoons onion powder
3 tablespoons ground dried oregano
2 tablespoons ground dried thyme leaf
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
6 ounces plain nonfat yogurt
1/4 cup fresh sprigs dill weed
3 cups shredded or chopped mixed salad greens
1 cup pared chopped peeled cucumber
1 teaspoon lemon juice
1.In a small bowl, mix together the first 8 ingredients and let marinate for at least 30 minutes.
2.In small bowl, mix together yogurt, 2 tablespoons lemon juice, 1/4 cup olive oil, fresh dill, cucumber, and salt until well combined. Hold in refrigerator.
3.Skewer the marinated pieces of chicken on 8 soaked bamboo skewers and grill until cooked through.
4.To plate, lightly toss mixed greens with lemon juice. Place in the corner of a square plate with skewers standing up against greens, and sauce in a ramekin for dipping.
