Chicken Avocado & Yogurt Appetizer from the Novo Nordisk Diabetes Academy

Chicken Avocado & Yogurt Appetizer
  • 1 peeled avocado

  • 2 cloves of garlic

  • 2 tablespoons olive oil

  • 1 1/2 cups chopped onions

  • 2 fluid ounces lemon juice

  • 2 tablespoons cilantro

  • 1 ounce plain nonfat yogurt

  • 16 ounces boneless skinless cooked chicken breast (yield after skin removed)

  • 4 cups chopped mixed salad greens

  1. Season chicken with salt and pepper. Set aside.

  2. In a pan at medium-high heat, add the olive oil and sauté the garlic and onion until it becomes tender and translucent.

  3. Add the chicken and cook on both sides. Make sure you don’t cook too long, so it remains juicy and tender. If a thin cut, should only take 5-6 minutes. Set aside.

  4. Remove the onion and garlic and transfer them to a blender, along with the avocado. Mix until they become a sauce.

  5. Season with salt and pepper. Transfer to a bowl. Add yogurt and leave to the side.

  6. Shred the chicken and combine with the avocado sauce.

  7. Add the cilantro and lemon juice. Divide salad greens into 8 equal portions and top with chicken mixture.
