Almond Cookies

Almond Cookies
  • 1 cup almond flour

  • 3 TBSP coconut oil, divided

  • 3 TBSP raw honey, divided

  • Dash sea salt

  • Almond slices for garnish, optional

  1. Preheat the oven to 325 degrees F.

  2. Mix the almond flour, 2 TBSP coconut oil, 2 TBSP honey and sea salt.

  3. Roll into 12 balls and press them flat on the cookie sheet with the bottom of a cup or jar.

  4. Bake 5-7, until edges begin it brown.

  5. Let cool on the cookie sheet (they will harden as they cool).

  6. Press almond slices in still warm cookies if desired.

  7. Melt the remaining coconut oil and honey and mix together. Drizzle over the cookies.

You can use butter in place of the coconut oil if you are allergic to coconut oil or don't have any or don't want to buy any. Occasional use of butter is not really detrimental and will lower the fat grams just a tiny bit.. I would leave out the honey because it is pure fructose and that is metabolized in the liver and made into blood lipids like triglycerides and LDL-b involved in heart disease. So if your triglycerides and LDL are high, don't use honey or eat high sugar fruits no matter what the ADA My Plate says. I would use a sugar substitute I know I like and that works for me.
