If you want to add a little spice to your life, try these jalapeño muffins. Surprisingly, jalapeños are a great source of vitamins A and C.Ingredients
1 TBSP olive oil
2 TBSP onion, minced
2 cloves garlic, minced
3 slices turkey bacon, cooked and chopped
1 TBSP fat-free milk
1/2 cup medium white shredded Cheddar
1/4 cup mild shredded Cheddar
2 TBSP jalapeños, finely chopped
Pepper to taste
Preheat the oven to 350 degrees F.
Grease a muffin tin and set aside.
Sauté onion and garlic in olive oil.
Beat the eggs. Add the milk, onion mixture, bacon, cheese, and jalapeño.
Spoon into the muffin tins, about halfway full.
Bake 20 minutes until the edges begin to brown.
Store extras in the refrigerator and pop in the microwave for 30 seconds for a quick breakfast.
